This salad is perfectly refreshing with its tart finish and diverse set of textures. Although this recipe calls for certain ingredients below, feel free to add any left over produce you need to use over the next few days. However, a few things are a must: sumac, lemon, and pita chips.

  • 2 1/2 cups chopped romaine lettuce
  • 3 cucumbers
  • 1 1/2 cups cherry tomatoes
  • 2 green onions
  • 1 1/3 cup chopped parsley
  • 1/2 tsp sumac
  • pinch of salt
  • 2 cups pita chips
  • crushed dried mint


  • 1 1/2 lemons
  • 2 tbsp olive oil extra virgin
  • 3/4 tsp sumac
  • 1/2 tsp crushed garlic
  • 1/4 tsp white wine vinegar
  • 3/4 tsp salt


  • Finely chop romaine lettuce and add to a medium/large bowl
  • Coarsely chop cucumbers, cherry tomatoes, parsley and green onions and add it to the lettuce. You can chop the parsley in a food processor if you would like it finely chopped
  • Add sumac and salt to the mixture and toss the salad together
  • Using a small bowl, whisk dressing ingredients together
  • Combine dressing with salad and toss together for an even coat
  • Right before the fattoush is ready to be served, add the pita chips and combine with salad
  • Sprinkle dried mint and sumac on the top of your fattoush for presentation


It is important to add the pita chips once the fattoush is ready to be served. This will preserve the pita chips texture and give a nice crunch to your fattoush.
