Prep Time 20 mins
Course Dessert, Snack

  • 1/4 cup unsalted butter
  • 2 tbsp unsalted butter
  • 1/2 cup tahini
  • 1 lb mini marshmallows
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 8 cups puffed rice cereal (rice krispies)
  • 1 cup milk chocolate chips

  • Line a 9 x 13 inch baking pan with parchment paper and oil the parchment paper with nonstick baking spray
  • On medium heat, melt all of the butter and tahini in a large pot. Do not brown the butter
  • Add all of your mini marshmallows to the pot (with the butter and tahini) and melt the marshmallows on medium heat. Add the marshmallows to the pot a handful at a time and mix with the butter and tahini before adding another handful. This allows the marshmallows to be fully mixed in with the butter
  • Continue to mix marshmallows in pot until fully melted
  • Take melted marshmallow mixture off the stove and add rice krispie cereal one cup at a time. After adding each cup, fully mix everything together before adding a new cup of cereal
  • Once all marshmallow and rice cereal is fully mixed together, add your rice krispie treat mixture to the prepared baking pan. Condense the mixture evenly across the pan by using an additional piece of parchment paper to pat down across the top. This stuff is sticky so stick to using the parchment paper instead of your hands during this step!
  • Add any decoration or sprinkles to rice krispie then set aside and wait to set

Prep chocolate for topping

  • Melt chocolate using a double boiler method
  • Add chocolate to a piping bag to decorate the top of your rice krispie treats. (if you don't have a piping bag with a small tip, you can use a zip lock. Fill the zip lock bag with the melted chocolate and cut a small hole at the corner to imitate a piping bag)
  • Allow your chocolate to set
  • Once rice krispie treats and chocolate has set, remove the treats from your baking dish. Cut treats into squares and serve!
